A gal I used to teach with shared this recipe with me years ago. Now my family can hardly wait until the fall when I make these cookies. They are wonderful around Halloween and especially at Thanksgiving when you only want a little taste of something sweet because you are so stuffed from dinner. By the way ... I don't even like pumpkin, but I love these cookies!
PUMPKIN COOKIES1 c. Crisco
1 c. sugar
1 egg
1 c. pumpkin (I use canned)
1 t. vanilla
2 c. plain flour
1/2 t. salt
1 t. baking powder
1 t. baking soda
1 t. cinnamon
*Cream cheese icing (premade in baking section)
chopped pecans (optional)In a mixing bowl, cream together the Crisco and sugar. Add the egg, the pumpkin, and the vanilla. In a separate bowl, sift the dry ingredients (flour, salt, baking powder and soda, and cinnamon). Gradually add to moist mixture and mix well. Drop by tablespoon onto greased baking sheet. Bake at 350 degrees for 12 minutes.
Allow to cool and then ice with cream cheese icing (you can make your own or use the premade kind). Sprinkle iced cookies with chopped nuts, if you like.
