CHEDDAR BACON RANCH PULL-APART ROLLS

Bake Time: 13-15 minutes
Yields: 12 Rolls

INGREDIENTS:
2 tubes (7.5 ounce each) refrigerated biscuits
3-4 slices cooked bacon, chopped
1 cup Cheddar Cheese, shredded
2 tablespoons butter/margarine, melted
1 tablespoon dry Ranch Dressing mix

INSTRUCTIONS:
1. Preheat oven to 375 Degrees F.
2. Lightly spray a 12-cavity muffin tin with cooking spray and set aside.
3. Cut each biscuit into quarters and place in a large bowl.
4. Add the remaining ingredients and mix well.
5. Divide the biscuit mixture between each muffin cup.
6. Bake for 13-15 minutes or until the rolls are golden brown.
7. Serve immediately.

CHURROS POPPERS

INGREDIENTS:
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 cup water
2 1/2 teaspoons vegetable oil
1 cup all-purpose flour
Oil for frying

INSTRUCTIONS:
1. In a medium bowl or brown papper bag, combine the 1/2 cup of sugar and cinnamon and set aside.
2. Heat about 2 1/2 inches deep of oil in a deep-fryer or whatever you use to 375 Degrees F.
3. Meanwhile, in a small saucepan over medium heat, combine the water, 2 1/2 teaspoons sugar, salt and 2 tablespoons vegetable oil.
4. Bring the mixture to a boil and then remove it from the heat.
5. Stir in the flour until the mixture forms a ball.
6. When the dough is cool enough to handle, scoop and lightly roll the dough into balls about the size of walnuts.
7. Fry 3-4 dough balls at a time, being sure not to over-crowd the pan, until golden brown.
8. Remove from the oil and immediately shake or stir in the reserved cinnamon-sugar mixture.
9. Remove to a plate while you repeat the process with the remaining dough.
10. Serve immediately.

CREAMY GARLIC MUSHROOM AND BACON

Broil Time: 3-5 minutes

INGREDIENTS:
8 ounces bacon, cut in strips
2 tablespoons butter or margarine
26 ounces brown mushrooms, washed and dried
1 tablespoon olive oil
1/4 cup dry white wine or chicken broth
5 cloves garlic, finely chopped
1 1/2 cups heavy cream or evaporated milk
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme, chopped
Salt and pepper, to taste
1/2 cup mozzarella cheese, shredded or grated
1/4 cup Parmesan cheese, shredded or grated

INSTRUCTIONS:
1. Fry the bacon in a large oven-safe skillet over medium heat until crispy.
2. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Set aside.
3. In the same pan, melt the butter.
4. Add the mushrooms, drizzle with the oil and mix through, scraping up any browned bits from the bottom of the pan.
5. Fry for 2-3 minutes to lightly brown the mushrooms and release their juices.
6. Pour in the wine or broth and let reduce for 2 minutes, while occasionally stirring.
7, Preheat the broiler.
8. Add the garlic and stir thoroughly for a minute, until fragrant.
9. Add the cream and herbs. Reduce heat to low.
10. Gently simmer until tender, about 4-5 minutes and sauce is slightly thickened.
11. Season with salt and pepper.
12. Add the bacon and stir to combine all of the flavors together.
13. Top the mushrooms with the cheeses.
14. Broil until cheese is melted and bubbly and mushrooms are done to your liking, about 3-5 minutes.
15. Serve warm.

APPLE ZUCCHINI BREAD

Bake Time: 45 minutes

INGREDIENTS:
1. 3 large eggs
2. 2 cups granulated sugar
3. 1/2 cup vegetable oil
4. 1/2 cup apple sauce
5. cups fresh or 2 cups frozen squash
6. 2 apples, cored, peeled, and chopped
7. 2 teaspoons vanilla extract
8. 3 cups + 3 tablespoons bread flour (you can use all-purpose)
9. 1 1/2 teaspoons ground cinnamon
10. 1/2 teaspoon baking powder
11. 1 teaspoon salt
12. 1 teaspoon baking soda
13. 1 cup nuts (optional)

INSTRUCTIONS:
1. Preheat oven to 350 Degrees F. and grease 3 bread loaf pans.
2. Mix all ingredients together until bleneded. 3. Pour batter into the bread pans. Split it equally between them.
4. Bake for 45 minutes to an hour.
5. When a toothpick is poked in the center of each loaf comes out clean it is done).

CUCUMBER TOMATO SALAD

Cucumber tomato salad is a light and refreshing side dish for any meal.

INGREDIENTS:
1 1/2 pounds (about 2 cups) tomatoes, diced
1 large (about 2 cups) English Cucumber, peeled, halved, and thinly sliced
1 Small (about 1/3 cup) Red Onion, sliced thin
5 large Basil Leaves, thinly sliced
3 tablespoons light flavored Olive Oil
1 1/2 tablespoons Balsamic Vinegar
1 teaspoon sugar
1/2 teaspoon Kosher Salt
1/4 teaspoon Black Pepper, freshly ground

INSTRUCTIONS:
1. Combine the tomatoes, cucumbers, onions (if desired), and basil in a bowl.
2. Drizzle with olive oil and vinegar.
3. Sprinkle with sugar, salt and pepper.
4. Stir well to coat.
5. Serve immediately or cover and refrigerate until ready to serve.
6. Enjoy!

MASON JAR SALADS

SALADS MADE IN MASON JARS WILL STAY FRESH FOR UP TO A WEEK!

Layer 1:
Important! First add the dressing into the jar. You can take any type of dressing.
If you add the dressing later, ingredients that you'd much rather stay dry might get soggy.

Layer 2:
Now enter crisp ingredients such as tomatoes, cucumbers, red onion, asparagus, celery, peppers, carrots into the jar.

Layer 3:
This level is for ingredients that should not necessarily swim in dressing, but it's also not a drama if they do get wet.
Some ideas would be mushrooms, zucchini, beans, lentils, peas, corn, broccoli and so on.

Layer 4:
More delicate ingredients such as hard boiled eggs and cheese (feta, gouda, cheddar etc.) can be added now.

Layer 5:
Now it's time to add something more substanial!
From rice over pasta to more exotic ingredients like quinoa or couscous, use anything you like to "seal" the jar.

Layer 6:
Finally we've arrived at the last level with ingredients that are les palatable when wet.
These include nuts and greens such as lettuce, spinach or arugula.

Store:
Now just close the jar and place it in the refrigerator.
Each morning, pick one and off you go to work.
The variations for salads in a jar are as endless as the universe.
Also, heretics are welcome: no need to follow these 6 levels religiously! Think of it rather as an entry-level guide.

HEALTHIER SALAD DRESSING OPTIONS:

REFRESHING SWEET AND SOUR DRESSING (ENOUGH FOR 2 JARS):
1/2 lemon
1 tablespoon honey
5 tablespoons olive oil
Pinch of pepper
Pinch of salt
Couple of chili flakes (or dried cayenne pepper will do the trick nicely)

HONEY MUSTARD DRESSING (ENOUGH FOR 2 JARS):
4 tablespoons olive oil
3 tablespoons vinegar
2 tablespoons mustard
2 teaspoons maple syrup (or honey for non-vegans)
Salt and pepper to taste

ASIAN STYLE PEANUT BUTTER DRESSING (ENOUGH FOR 2 JARS):
1 tablespoon peanut butter
1 tablespoon soy sauce
1 teaspoon honey or maple syrup to make it vegan
1 tablespoon vinegar or lemon
2-3 tablespoons water
a pinch or two of chopped or grated ginger (dried is fine)

MAIN COURSES

BACON WRAPPED CREAM CHEESE STUFFED CHICKEN BREASTS

INGREDIENTS:
2 boneless, skinless chicken breasts
4 tablespoons cream cheese
1/4 cup pepper-jack cheese shredded
2 tablespoons green onion, chopped
2-4 pieces of bacon

KITCHEN TIP: One piece of bacon wrapped around each breast is enough,
but 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.

INSTRUCTIONS:
1. Cut each chicken breast in half lengthwise.
2. Pound breasst so it is about 1/4 inch thick.
3. Mix together softened cream cheese, green ions and cheese.
4. Put 1/4 of this mixture into the middle of each piece of chicken.
5. Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
6. Wrap 1 to 2 slices of bacon around the chicken, secure with tooothpick, if needed.
7. Place on baking sheet and bake for 30 minutes.
8. Broil topside for about 5 minutes to fully brown and crisp the bacon.
9. Turn chicken over and broil for another 3 minutes or so to crisp up the bottom side.

CREAMED CHIPPED BEEF ON TOAST

INGREDIENTS:
4 tablespoons butter or margarine
1/4 cup all-purpose flour
3 cups milk
1/2 teaspoon ground black pepper
8 ounces dried chipped beef, thinly sliced

INSTRUCTIONS:
1. Melt the butter in a medium saucepan over low heat.
2. Add flour and whisk until smooth.
3. Add the milk a little at a time, whisking well after each addition.
4. Bring to a boil over medium-high heat and cook, stirring until thickened.
5. Stir in the beef and cook until it's warmed through.
6. Serve over toast of your choice.

CROCKPOT CREAMY CHICKEN ENCHILADAS

INGREDIENTS:
1. 4 large boneless skinless chicken breasts (1 1/2 - 2 pounds)
2. 1 block (8 ounces) cream cheese, softened
3. 2 cans (10.5 ounce) condensed cream of chicken soup
4. 1/2 cup milk
5. 1/4 cup lime juice
6. 2 teaspoons minced garlic
7. 1/2 teaspoon onion powder
8. 1/2 teaspoon ground cumin
9. 1/4 - 1/2 teaspoon cayenne pepper (optional)
10. 1/2 teaspoon black pepper
11. 3 cups shredded Monterey Jack cheese with Jalapeno, divided
12. 1 can (4 ouces) chopped green chilies
13. 10 small flour tortillas, cut into slices
14. Fresh chives, for garnish (optional

INSTRUCTIONS:
1. Spray a 5 or 6 quart crockpot insert with non-stick cooking spray.
2. Place the raw chicken breasts in the croickpot.
3. In a large bowl, beat the cream cheese on high until smooth.
4. Stir in the rest of the ingredients except the cheese and chilies.
5. Beat on high speed until well mixed. It's ok if there are a few chunks of cream cheese.
6. These will melt during baking.
7. Add half of the cheese and the chilies into the soup mixture, mix well.
8. Pour the soup mixture over the chicken in the crockpot.
9. Put the lid on and cook on high for 3-4 hours (or on low for 6-8 hours), or until the chicken is cooked through.
10. The internal temperature of the chicken should be 165F.
11. When chicken is cooked, remove from crockpot.
12. Shred the chicken with 2 forks.
13. Stir the shredded chicken back into the crockpot.
14. Add the sliced tortillas to the crockpot and stir well to blend.
15. Add the remaining cheese to the crockpot.
16. Cover and cook for an additional 30 minutes on high or until the cheese melts.
17. If desired, serve with fresh chopped chives.
18. Serve hot.

IDAHO TACOS

INGREDIENTS:
1. 1 pound ground beef
2. 1 envelope taco seasoning
3. 4 hot, baked potatoes
4. 4 tablespoon butter/margarine, softened
5. 1/2 cup shredded cheddar cheese
6. 1 cup chopped green onions
7. Salsa, guacamole, sour cream (optional)

INSTRUCTIONS
1. In a large skillet, cook and crumble beef over medium heat until no longer pink, drain if necessary
2. Add taco seasoning and prepare according to the package directions.
3. With a sharp knife, cut an x on the top of each potate. 4. Fluff the potato pulp with a fork.
5. Add 1 tablespoon of butter to each potato, (optional)
6. Top each potato with 1/4th of the taco meat.
7. Top with cheese and green onions.
8. Serve with salsa, sour cream or guacamole (optional)

HOMEMADE MACARONI AND CHEESE

1. 1/4 brick of Velveeta
2. 1/8 cup milk
3. 1/8 cup butter/margarine
4. 2 cups macaroni noodles

INSTRUCTIONS:
1. Cook noodles according to package directions in a medium to large pot. Drain.
2. Meanwhile, slice the Velveeta in slices.
3. Melt the Velveeta, milk and butter in the pan used for the noodles.
4. Stir in the noodles.
5. Add salt and pepper, if desired.
6. Enjoy!

NO BAKE PEANUT BUTTER BALLS

TIPS:
1. Store the peanut butter snowballs in the fridge in an airtight container until ready to eat.
2. Place layers of waxed paper between layers to prevent the snowballs from sticking together.
3. If stored correctly they can last up to a week.
4. They also freeze well.
5. Just place in a freezer safe container and can be stored in freezer for up to a month.

INGREDIENTS
4 cups of powdered sugar, divided
1 cup (2 sticks of butter) softened
2 cups of creamy peanut butter
1 1/2 cups of graham cracker crumbs

INSTRUCTIONS
1. Combine 3 1/2 cups of powdered sugar in a large bowl with the butter.
2. Add in the peanut butter and the graham cracker crumbs, mixing until combined.
3. Using a small cookie scoop or measuring spoon, roll the peanut butter dough into 1 inch balls.
4. Place them on a baking tray lined with parchment paper.
5. Once you have rolled all the dough, freeze the balls for about 30 minutes.
6. Place the remaining 1/2 cup of powdered sugar into a shallow bowl.
7. Roll each peanut butter ball in the powdered sugar one by one.
8. Place the coated balls back onto the tray.

FROSTING
1/2 cup plain Greek yogurt
1/4 cup applesauce

1/4 cup plain pumpkin puree (not pumpkin pie spice)

HOW TO STORE HOMEMADE DOGGIE CUPCAKES:
TO STORE: Store any leftover cupcakes in an airtight container in the refrigerator for 3-4 days.
TO FREEZE: These cupcakes freeze well, though I recommend freezing them unfrosted.

TIPS FOR MAKING THE BEST DOG CUPCAKES:
Each dog can react differently to any type of new treat that hits their belly. This is important to note when serving your pup something new for the first time.
Serve your pup one treat within 24 hours to see how their belly responds before giving them multiple.
Be sure to use whole wheat flour in this recipe, not all-purpose. The frosting consistency in this recipe should be similar to actual frosting.
The frosting will have a light orange tint to it and the cupcakes will have a light brown coloring. You will not have very much frosting left over in this recipe.
These cupcakes are very moist on the inside. These cupcakes will bake up, creating the classic cupcake look with a larger dome.

SUBSTITUTIONS AND ADDITIONS:
Pick Your Peanut Butter: You can use any non-natural peanut butter or natural peanut butter BUT DO NOT substitute almond butter or any other nut butter, as most nuts are toxic to dogs.
Tasty Toppings: Feel free to decorate your puppy cupcakes with your pet’s favorite toppings. Sprinkle on some kibble or cover your pupcake with crushed Dog Treats.
Pick Your Puree: You can replace the pumpkin puree with pureed sweet potato or defrosted frozen butternut squash, although the consistency will be thicker and may require some liquid.

INSTRUCTIONS FOR THE PUPCAKES:
1. Preheat the oven to 350°F
2. Prepare a 12-cup muffin tin with non-stick cooking spray.
3. In a medium mixing bowl, mix together the whole wheat flour and baking soda.
4. Mix well and set aside.
5. In a large mixing bowl using an electric hand or stand mixer, mix together all other cake ingredients except for the milk bones.
6. Blend until smooth.
7. Add the dry mixture and mix until fully incorporated.
8. Pour cupcake batter into the muffin tins, filling the cups up nearly to the top.
9. Place inside the oven and cook for 22-24 minutes.
10. When done, allow the cupcakes to cool completely inside the muffin tin.
11. When the cupcakes are at room temperature, prepare the frosting.

INSTRUCTIONS FOR THE FROSTING:
1. Add all frosting ingredients to a small mixing bowl and blend well using a fork.
2. Mix until the frosting is thick, clump free, and falls off the fork very slowly.
3. Apply the frosting to the top of the cupcakes using a butter knife or frosting bag.
4. Garnish with a milkbone if desired.
5. Serve to your favorite fur baby!

HOMEMADE SOFT DOG/CAT FOOD

Cook Time: 30-45 minutes
Yields: 21 meals (depending on size)

INGREDIENTS:
1 pound (your choice of one) ground lamb/bison/chicken/turkey
1 small bag frozen or 1 fresh sweet potato, grated or diced
1 small bag frozen or 1 cup fresh green beans
1 small bag frozen mixed peas and carrots, or 1 cup each, diced
1 small bag frozen or 1 fresh zucchini, grated or diced
1 small bag frozen or 1 cup fresh spinach, cut up
1 cup frozen/fresh cranberries
1 cup frozen/fresh blueberries
2-4 fresh bananas, peeled and diced
1 cup frozen/fresh strawberries, diced
1 can pure pumpkin (not pumpkin pie)
2-4 hard boiled eggs, diced
2 cups brown rice (instant or long cook)

INSTRUCTIONS:
1. In a medium pot start the brown rice according to package directions.
2. In a large pot add the sweet potato, green beans, peas, carrots, zucchini and cover with water.
3. Bring to a boil, cover, lower heat to medium and boil for 30 minutes. Drain.
4. To another pot add the cranberries and blueberries and cover with water.
5. Bring to a boil, cover, lower heat to medium and boil for 30 minutes. Drain.
6. To a small pot add the eggs, cover with cold water and cover the pot.
7. Bring to a boil, lower heat to medium and boil for 10 minutes. Drain and peel.
8. In a large mixing bowl add the pumpkin, strawberries and bananas. Mix together. Set aside.
9. In a medium frying pan cook the meat until no pink remains (you don't need to drain it).
10. When the meat is almost cooked add the spinach and finish cooking.
11. When everything is cooled mix all remaining ingredients into the mixing bowl with the fruit.
12. Portion out in containers or zip lock baggies what you would feed in 1 meal.
13. It may take a few days to portion it out correctly according to how much your dog/cat eats.
14. Put 1 meal in the refrigerator and the rest in the freezer.
15. As you use the 1 in the refrigerator put 1 from the freezer in the refrigerator for the next day.

4. THE PERSON HOSTING IS IN CHARGE OF THEIR TOURNAMENT.
IF YOU DO NOT AGREE WITH THE WAY THEY RUN THINGS, PLEASE CONTACT THAT HOST AFTER THE TOURNAMENT.



5. DO NOT TAKE OVER SOMEONE ELSE'S TOURNAMENT UNLESS ASKED TO DO SO!
ONLY EXCEPTION IS IF A HOST IS A NO SHOW AND YOU ARE SUBBING.



6. WE ARE A TEAM, AND WE EXPECT EVERYONE TO DO THEIR BEST IN GETTING ALONG WITH ONE ANOTHER
AND FOLLOW THESE SIMPLE RULES, SO THAT WE MAY KEEP OUR GAMING EXPERIENCE FUN!



7. SOME GAMES NEED EXTRA TIME. PLEASE ALLOW 2 HOURS FOR FULL GAME CANASTA, SPADES, GIN, AND SPECIAL TOURNAMENTS AS NECESSARY.



8. IF YOU MUST MOVE A TOURNAMENT PLEASE LET SOMEONE ELSE ON THE STAFF KNOW YOU ARE DOING SO!



9. WORK TOGETHER, PLAY IN EACH OTHERS TOURNAMENTS EVEN IF YOU DON'T GET ALONG.
PUT ASIDE PERSONAL DIFFERENCES FOR THE GOOD OF OUR LEAGUE.



10. NO ONE SHOULD EVER FEEL PRESSURED ABOUT HOSTING OR PLAYING.



11. OUR TOURNAMENTS NEED TO START BEING AS CLOSE TO START TIME AS POSSIBLE.
IF YOU HAVE PLAYERS RUNNING LATE THAT ARE FAITHFUL BUT MAY BE RUNNING LATE BECAUSE OF INTERNET,
KIDS, ETC. DO NOT TAKE THEM OUT. WAIT 5 MINUTES AND THEN BEGIN BUT LEAVE THEM IN THE FIRST ROUND.
IF YOU HAVE NOT HEARD ANYTHING FROM A PLAYER, NOT ONLINE, WAS NOT IN THE PREVIOUS TOURNAMENT REGISTERED FOR,
THEN CHANCES ARE THEY WILL NOT SHOW FOR YOURS. YOU MAY TAKE THEM OUT.



12.IF YOU ARE AROUND OR A HOST DOESN'T SHOW AND YOU ARE IN THE TOURNAMENT STEP UP AND RUN IT.
PLEASE DO NOT WAIT FOR THE HOST TO SHOW. GO AHEAD AND TAKE IT OVER.



13. FULL CANASTA GAMES SHOULD BE 2 ROUNDS TRUE SWISS. ALLOW 2 HOURS FOR THIS.
QUICKIE CANASTA SHOULD BE NO MORE THAN 3 ROUNDS TRUE SWISS AND CAN BE DONE IN AN HOUR.
THE TABLE SETTINGS AND RULES FOR ALL GAMES ARE ON THE LEAGUE PAGE UNDER THE TOURNAMENT TAB.



14. GIN GAMES IN THE EVENING ARE DEFINITELY 2 HOURS. IF SETTING GIN PLEASE LIMIT IT TO 3 ROUNDS TRUE SWISS.



15. IF IT IS A SPECIAL GAME LIKE STAFF VS. FAMILY WHERE A DEFINITE WINNER NEEDS TO BE ANNOUNCED
THEN YOU NEED TO SET IT AS A REGULAR SWISS.



16. MOST OF YOU ARE AVOIDING THE BYES IN YOUR TOURNAMENTS. SOMETIMES IT HAPPENS. YOU COULD HAVE A LARGE NUMBER IN YOUR TOURNEY, SOMEONE REGISTERED LATE, ETC.
IF YOU CAN AVOID A BYE, PLEASE DO. THIS IS ESPECIALLY TRUE WITH CARD GAMES. THERE IS NOTHING WORSE THAN SITTING THERE DURING A CARD GAME.
ALSO, IF YOU DO HAVE A BYE, PLEASE DON'T GIVE IT TO THE SAME PERSON DURING A GAME. BYES ARE NOT A PUNISHMENT.
THEY ARE PART OF THE GAME, IT'S CONTROLLED BY CASES, NOT THE HOST. IF YOU HAVE A BYE SIT BACK AND ENJOY, YOU GET A FREE WIN!



17. WHEN SETTING TOURNAMENTS PLEASE SET THEM 3 ROUND TRUE SWISS AND CHARGE 150 BUX.
IF IT IS A SPECIAL YOU MAY NEED TO SET IT AS A REGULAR SWISS TO GET A CLEAR WINNER AND CHARGE 200 BUX.



18. IF YOU ARE AVAILABLE DURING THE DAY, WEEKENDS AND NIGHTS PLEASE SET IF YOU CAN.

20. BLUE LINES -- ALL OF US HATE THE BLUES, BUT WE NEED TO TRY AND MAKE SURE THAT PLAYERS DO NOT PLAY EACH
OTHER OVER AND OVER AGAIN. IF YOU CHECK CASES, THEY WILL AGREE WITH THIS THAT PLAYERS SHOULD NOT PLAY ONE ANOTHER
IF IT CAN BE AVOIDED. IF YOU ARE NOT SURE HOW TO SWITCH PLAYERS AROUND, PLEASE ASK. WE WILL BE HAPPY TO HELP YOU.
